If you feel like you shouldn’t jump to 8 or 11, then I recommend 3. It’s one of my personal favorites and my first one. I grew up playing the GBC version, but the SNES version is still the best in terms of graphics (otherwise, GBC has like an extra dungeon and collectible monster coins)... Yup, I played some of the SNES version two years ago, but that was when I was still sampling DQ and it hadn't really clicked yet. Now I look at that version and can't stop drooling. Definitely the one I'll be playing.
For the rest:
DQ6 - I really dug the DS engine for 4-5, so I got a DS copy of 6 (loose cart, the prices for the full thing are crazy!) DQ7 - 3DS, but I plan to play this one last as recommended by Sarge and from what I've heard others say, since it's super slow paced and long. DQ8 - I own it on PS2 DQ9 - Don't plan to play this one DQ11 - Glad I waited for the Switch version!

Xeogred since you have DQ8 on PS2, just play that version then. And I agree with Sarge on DQ7. That’s easily my least favorite DQ. The original version is fine but the English version suffered from a bland localization (a bit of the opposite issue it has these days, funny enough) and I dislike ArtePiazza’s environment graphics. Check out DQ6 on SNES and you might what I’m talking about. I know 3D graphics were the big thing back in those days, but I don’t have to like it. Also, the FMVs were just god awful! Now, there is something good I’ll say about DQ7 on PS1: you can see the world. And therein lies my beef with the 3DS version. Like 1/3 of the screen is covered by your character in that version, so it’s difficult to really know where you’re going. The camera just isn’t pulled back far enough. That said, DQ7 in either PS1 or 3DS is still a DQ game. That means that it’s still freaking fantastic and my gripes with it are nitpicks (and I prefer the PS1 version). The individual stories are gorgeous and they’ve managed to get a tear to come out of my eyes a couple of times. But there’s definitely better DQs to try before it. Don’t skip out DQ IX by the way. I don’t know what your reasons for skipping are but it’s yet another fantastic game, albeit it is overall on the weaker side. It’s essentially an evolution of DQ III with a blend of DQ VI/VII and VIII. Oh, so I’m still playing DQ XI S. I’ve managed to forge the supreme super sword of light! I still have a bunch of extra stuff to take care of, though, before I get to fight the final boss. This game almost feels like Chrono Trigger in certain aspects. It’d be impossible to really explain how without spoilers, though, but essentially you get the ability to either fight the true final boss immediately or take your sweet time powering up before doing so. It’s awesome. It’s easily in my top five games released this decade (Breath of the Wild and Persona 5 are up there as well)

Yeah, that's a very valid complaint with DQVII's 3DS version.
And... you dropped the Chrono Trigger bomb. Oh dear, now I know I'm going to have to rumble through DQXI soon.

Before you go in expecting Chrono Trigger, know that the main quest takes about 60-70 hours alone (if you don't stop to do every side-quest) and there's no free time travel. This game's hero doesn't unlock his own Epoch, unfortunately. What I'm comparing, however, is the part in Chrono Trigger when you've defeated Dalton on the ship and everything comes crashing down and you essentially have the ability to do a bunch of different quests, one of which is getting into the ever-looming, time-agnostic Black Omen. It's basically a similar setup in Dragon Quest XI: you get through a series of events which eventually unlocks a "Black Omen"-type threat that's ever looming... but you're encouraged to go EVERYWHERE in order to grab the best gear, level up, and overall just gain the power to annihilate the true final boss.

Sounds good to me. And yeah, I know it's a lot longer game. I remember putting in I'm pretty sure 75 hours into Dragon Quest VIII.
I'll tell you a game where I got heavy Chrono Trigger vibes, though, and that was The Last Story. I'd absolutely love a remake of that game that fixes the tech issues. Heck, I wonder how well it runs in Dolphin? Sounds like that might be a great idea when I finally get that new PC.

Played a bit of River City Girls this weekend. Combat feels really good in this one. I'm starting to get the hang of a few finishers, and my moveset is slowly expanding. No idea where the level cap is, though. I'm at Level 15 right now.
Food items work a little differently this time. They give a stat boost the first time you consume them, but after that, only restore stamina. Basically, you want to buy everything you can to bump up your parameters.

I am playing through SaGa: Scarlet Grace - Ambitions. I purchased it for PS4 and Switch to support my favorite game series. My plan was to play the Switch version portable and the PS4 version on the tv, but I have also tested the Switch one on the tv. I have noticed that the Switch version sometimes lags a bit during combat (for some reason when it is docked rather than when portable), but it is no big deal since it is turn based. The PS4 version seems to run perfect so far. The Switch version has the convenience of playing wherever of course. The game is so engaging. When I first saw the combat in action some years ago in a trailer, it looked a bit slow. I did not doubt the depth of the combat mechanics, because SaGa has always excelled there, but it seemed like it had long loading times and other issues that made it look unexciting. Perhaps that was just a problem with the original Vita release (if it was ever a problem, I know you should not judge a game by its trailer haha), because the combat in the 2019 version is thrilling. Every battle is sort of like a puzzle you have to solve (a very small amount of humanoid Puyo Puyo and who knows what else haha). It is challenging in a refreshing way. I wish I were a better writer so I could fully explain this. Maybe I can try after I finish the game. World Map Animals: Choices, choices... I really like the artwork in the opening. More world map animals: It's nice to take a stroll every now and then, oh, another dog...Should I pet it?
