There is a way to stop the skeletons from respawning. Actually there's two ways IIRC. I won't spoil it though.
Four Kings is one of the coolest boss fights in the whole game. For many folks it's a nightmare fight that induces soul crushing defeat repeatedly. However, that was one of the boss fights that was easy for my build. A lot of these boss fights really do come down to your build. I'm sure you'll figure it out.
Seeing all the water logged dead bodies after opening the door blew me away. Such amazing attention to detail.
Did you already kill the red dragon?

Not yet. I'm sure I'll head back there at some point. Just trying to cover all my bases here before I make some sort of end run. Figure the end boss will be a bear, and I'd love to get my character to 40/40/40 VIT/END/DEX before I'm done. I'm well on my way, already got 40 in DEX, 32 END, and either 27 or 28 VIT. Then I'll probably shift to making my build more versatile, probably through some magic if I can find some good passive stuff for this build. (I've got Power Within, which I haven't even used yet, haha.)

Pyromancy doesn't require much Faith or Int if you noticed. There's also one buff you can get with it that seems essential to grab every item in some hotter places in these games... cheap Miracles aren't a bad idea either, but I think having Heal way earlier than now might have been handy. Not sure about this point. Sorcery is kind of all or nothing, it's cool to have a range option in some cases but yeah you won't be doing much. It's very brokenly overpowered in this one like Demon's Souls though, I -accidentally- killed the final boss in basically two moves when I finally tried out an INT build. I queued up two high level spells, the boss lunged at me, and died when they all hit. lol, not very fun... but amusing. But yeah I encourage messing with some spells if you're interested. I usually have some supplemental spells when I play these now, and you can infuse/forge weapons in a way that scales well with certain stats too. Even having something like Cast Light could be nice to have to say, help see your footing in water (or a Torch) like you were saying earlier back fighting the hydras. Did you find a good sorcery merchant? Well I guess there might be two where you've been focused lately... One last tip I will drop is that there is a seriously hard to find blacksmith deep in the Catacombs. Might not be useful for you at all but yeah. Even after beating it like five times that one always trips me up. I usually just stick to the main guy Andre and the giant at Anor Londo though.

I encourage messing with some spells if you're interested. No. That is the way of the weak. If you want to imbibe your weapon with magical affects, there are consumable items that do that. I used to apply lightning or fire to my Dragon Greatsword via items that temporarily assigned the effect. When I was fighting enemies that were weak to those elements anyway. The official last boss of the base campaign is a joke. The real last boss can be found in the DLC though.

Well, made progress and lost progress (such as it is). First, I managed to win the Four Kings fight the first go, although it was really close! My last blitz got me through it.
I went back to the Catacombs, and figured out that killing the necromancer works. I also forged a divine weapon, and that works, too. Made mincemeat of Pinwheel (I'm way too strong for here), but then found The Hall of the Giants. The first run of which saw me plummet to my doom. Actually, that happened a lot, it's so flipping dark. Anyway, I did eventually get down to where there's a dude that kicked me off the ledge, and thankfully there's a lantern there, but it forces you to use it in your shield slot, which is unfortunate. I also have a cast light spell now, but I need more INT to use it.
Anyway, in the process of going back there after a death, I managed to, uh, accidentally hit the blacksmith down there when those stupid freaking Bonewheels slipped in there behind me, and I took a swipe while locked on that hit him too. Thankfully, I didn't kill him, but man did I come close. Had to go back to the guy in the bell tower and get absolved again. That's where I'm at now, so back to the Hall of the Giants when I resume.
The lost progress is the sheer number of souls I've lost to deaths, and lastly to the absolution, which cost me 37,500 this time. Ouch. But I did jump back into the painting and those spear skeleton blobs are a really good place to quickly farm souls, so it made it a little less painful.

Surprised you one shot Four Kings. Never too hard for me either, I just love how cool the fight is, great music too. Once you've played a lot of these, this particular fight is just second nature... getting up in their faces and rolling into them, etc. Pinwheel would probably be easy for a Soul Level 1 fight heh. That's why I didn't care to "hype" and spoil the boss earlier, easily the games biggest joke boss. Nothing of value lost here lol... Surprised you found the blacksmith. Guess I just needed to drop a hint? There's so many weird secrets in this area. Hidden bonfire even. Those Bonewheels can really grind you up. To be honest the skeleton knights in this one are a joke compared to Demon's though. Even all the way up through Elden Ring, skeleton enemies have never been quite as tough as they are in Demon's. Guess they wanted KF/ST fans to have some PTSD there... that said those giant dinosaur like skeletons in Tomb of the Giants are scary. They hit like a truck. I don't really care for this area. And that's PATCHES by the way, just your friendly ol' traveling merchant... he's in just about every single game, dating back to the Shadow Tower's. I always like killing him in Demon's Souls since he has an HP regen shield. Does the absolution guy look like a trustworthy pastor to you? lol. I never trust them.

More progress. I killed the red dragon the other day, although I died to him a bunch. I kept trying to get to his side, which just set me up for him to fly and burn me up. Coming in head on, even with good flame defense, is basically instant death. But what did work finally is that I dashed at him when he swooped down, under his body at the front, and just hacked away. Managed to kill him before he could obliterate me. Yay, Iaito+15!
So I went to the opened Lordvessel door in Anor Londo and found the Duke's Archives. Got myself whomped by Seath the Scaleless, in an apparently unwinnable battle. You respawn in a prison cell, but of course I made my escape. Managed to get out (although those freaking archers hurt, man!), and found a bunch of crystal golems outside, including a gold one. Hey, I know how this usually goes... killing it revealed there was a person trapped inside, the daughter of the other Catalina knight. She was at Firelink last I saw her, not sure how to get them reunited.
Anyway, outside of that castle was the Crystal Caves. Yay, another precarious footing place! The Tomb of the Giants was a pain, and this was too, at least until I was done exploring and found the straightline path to the boss over the invisible bridges. Oh, hey, it's Seath again! And he has curse attacks! Well, good thing I had a Cursebite Ring (and I saw that his attacks inflicted curse from the prior battle), but he did kill me the first time. I managed to sneak in and kill him the second, but man, it was close again.
From there, back to the Tomb of the Giants. Got to the bottom and went through the sealed door (I'd not placed the Lordvessel when I got down there before), and made my way to Gravelord Nito. He was... shockingly easy. The skeletons were annoying, but hey, divine weapons worked, and the Iaito absolutely wrecked Nito. Er... neato!
Went back into the Painted World again, snagged a few more levels. I'm sitting at something like 35/40/40 now. Looking forward to pushing stamina on up, then I will figure out what else to invest in - I'm avoiding diminishing returns, but the way I've been min-maxing, it wouldn't surprise me if I'm ready to go take down the last boss. I reckon the last place I need to go is the Demon Ruins. That will have to happen tomorrow.

The Duke's Archives is great. Love that level.
Did you see Ash Lake from the cliffs before Nito?
Nito is trash, I've never had any issue with this boss myself. Kind of funny he's the evil undead big bad, but I'd say Four Kings and New Londo are cooler in that aspect.

Excluding the DLC, you've got three areas left to do, but none of them are very large. Demon Ruins is one of them. You've still got quite a few more bosses ahead of you (in the base campaign). Two of which may prove tricky. One is the boss I mentioned beating legitimately (due to not cheating through with guides), that is amusingly super easy to beat if you know a trick. If you don't know the trick, it's a harrowing battle (or was for my build anyway). Then there is another boss that many people quit playing the game at entirely. Because the way this boss works is completely different than any other DS1 boss. I'll just leave it at that. You seem to be flying through this game though, so I expect neither of these bosses to hold you up. Nor should any of the other bosses I've not alluded to. Including the base game's final boss. I easily took out DS1's final boss on my first try, it's a joke. As you have realized dragon bosses tend to be the hardest. That's why the DLC's final boss is the TRUE final boss of Dark Souls. But there are multiple bosses in the DLC before it. I still recommend doing the DLC for the complete Dark Souls experience.

Poking around in my inventory, I noticed I had a broken pendant that described something to do with Oolacile. Went back to where I freed the girl from there, and there was a portal. Got snatched into there, so new area. My understanding looking around after the fact is that this is the DLC content. So I may dive through here a bit and see if I can't use it to beef up more. I also would like to find a good place to farm Humanity - I want to see what beefing up my current covenant does for me.
EDIT: Welp, just got cooked by a dragon. Good place to stop. I'm honestly burning out a bit, I probably need to give it a break for a little while. I've got over 45 hours in so far.
