AM2R really is great. I like both remakes, though - Samus Returns takes a different but also excellent tack. I think Samus Returns could be hard to go back to in a post Dread world now though. Dread took some of its concepts and just did everything so much better.
But yeah, recommended for Metroid fans and a first run. Heck, I even kind of recommend Other M to the hardcore fans... the game itself is solid, it's just the story that's utter trash.

Dread is my next game after I finish RDR2 (and I'm getting close). Hopefully it'll live up to you and Sarge's praising of it. Dread was one of the two reasons I finally capitulated and bought a Switch. The other is the upcoming Front Mission remasters.

I’m surprised no one has mentioned the Zelda redux series of hacks. They’re improvement patches that make Zelda games more enjoyable to play. For example, it adds L and R item switching for A Link to the Past. For Zelda 2, it allows you to level up any stat you want, making each level up feel like a traditional level up in which you pick which stat to focus on. For Ocarina of Time, it speeds up the text and assigns the ocarina and boots to the d-pad, freeing c buttons and streamlining the use of those items. Majora’s Mask has a similar patch. For Link’s Awakening, it’s mostly just removing the hint text that appears when you touch a boulder or crystal. I think there’s one for the original Legend of Zelda but I don’t remember trying it out. Instead, I have played the auto map mod for the original Zelda which adds a fully colorized map to the top left map view on screen. I like cartography in video games so this was extra great for me. Also, not to toot my horn or anything… well, yes… there’s a hack out there that transforms Ultima: Runes of Virtue into a Zelda game made by yours truly. I wanted to replace more characters but got distracted and haven’t gone back to it but I still want to return to it. I actually have an unreleased version with most NPCs replaced; I want to replace the enemies too. Eventually, I’d like to change some text too. I think I see some hacks like that with some speedrunners who are practicing certain spots or whatever. Like UI changes in Super Metroid and such. Speaking of, Super Metroid has somewhat of a map randomizer now. Seems to be rough and still in the works, I've seen one speedrunner (Oatsngoats) maybe get softlocked on some of the hardest settings too, so it's definitely not totally balanced yet. But I love how Super Metroid is eternal. I've messed with the normal item randomizers before and it's a blast if you know the game well. I haven't used the map randomizer at all yet but I think this is it: maprando.com/

After I beat em' all.
Seems like it'd be clunky and weird though... but I won't deny I used a mod to utilize the second joystick for KF4. You could only really map L2/R2 though.

This is my initial take as well, and this is coming from someone who generally vastly prefers KB+M in first person games. (I should also note that I've only beaten King's Field (Japan) so far in this series, though I've played some ways into King's Field (US release - which is technically King's Field 2, but I've already digressed into nested parentheses)). The reason I say that, is that until you've improved your stats a bit, movement in King's Field already feels kind of stilted and slow (by design). I can't imagine KB+M would help much as far as that goes, and might even feel worse due to seemingly unresponsive mouse movement. I suppose the injector might compensate for that somehow, but then it would diminish the initial challenge aspect of the game itself. It would be interesting to try all the same though.

Took Ex years to make me crack and finally enjoy them. I used to yell about how they'd be better on PC this and that. I played and loved Ultima Underworld, so that was my frame of reference... but eh, KF is definitely different. Wouldn't change a thing now. I still need to give Eternal Ring another look as the last one I have left... sadly. I need more! But I can see myself replaying the KF's someday.
KF2 was my first and still maybe my favorite in some ways. It was such a rude awakening and learning curve, haha. I love how that one is the smoothest running of them all too though, framerate wise. If the others could be a smooth 30-60 that'd be cool to me. But eventually you just get in the zone with them. The first game was pretty neat but KF2-K4 are incredible and each have their own flavor (much like Souls differs more than some might expect, level design wise at least). Shadow Tower is my least favorite of them but I'm still glad I played it. Shadow Tower Abyss was pretty cool and different. On the outside I always thought I'd like the ST games more but KF is in another league for me.

I still need to give Eternal Ring another look It is worth playing. May only be a 7/10, but it's a unique and fun 7/10. I mean, it's a FromSoftware game man. Well maybe we'll get the PSP entries fan translated someday, even though they are done in a Wizardry style, I'd still play them. There are also some Japan-only mobile KF games that FromSoftware made. Good luck finding those though. You could emulate them if you did. There are also those Sword of Moonlight fan made games. I've read some of them are really good. But they weren't made by FromSoftware.
