Yakuza 5 is digital only on the PS3 if that makes a difference. It's $30 checking now... so I bet you'd be spending MORE money buying these games piece by piece on the PS3. But you'd probably have to spend more money on a PS4, yet the collection would cut a little on the price.
Judgement and 7 are on PS4, along with the Fist of the Northstar game the same studio did, Yakuza 6 and the Kiwami's... You'd probably be fine with a base PS4 for these, but if you're going to wait for some deals like Sarge said I'd future proof some and spend a little more if a Pro is more in range. You'd probably get twice the HDD space too. About ~10 games will take up the base 500GB HDD so then you have to constantly delete game data, since everything has to be installed on the PS4 (unlike the PS3). Your saves and stuff are small files you can still keep though.
I'd go with a PS4.

Is there even any reason to play the cross-platform Yakuza games on PS3? I'm not very well acquainted with the series, but I would have thought the PS4 versions would automatically be nicer. Unless there's something special content the PS3 versions had unbeknownst to me.

But the restored content from Yakuza 3 is a big deal, the collection isn't expensive and definitely practical, and like Xeo said, there are more games (Fist of the North Star+DQXI), so... PS4 seems like the way to go. If anything, the only problem is there'll be too many Yakuza games to play. I'm not someone who can play a bunch of games in the same series one after the other, I would probably get tired of the gameplay if I did that.

I'm just now finally kind of getting the itch to play one again, but it's still a little winding when I think about it haha. I hear Yakuza 5 is the longest and maybe one of the worst though. I skipped over it because of things I heard back then and I didn't want to drop $50 or whatever it was for digital only... my waiting paid off so I can get the collection sometime, if it's cheap enough just to play this one. But yeah, I might just play Judgement first instead. Looks way more promising. And 7 / Like a Dragon will probably be different enough, that one will be fresh anytime I play it.
I think my time played on these says it all. I put in about 20-30 hours on average for all of them, but put in 72 hours into Yakuza 0. That was by far my favorite. I'd say Kiwami 2 is the runner up. I actually probably would have kept playing more of that one too, but I was totally burned out by that point and ready to move on.
Great series all around, but yeah anyone interested in them, keep it a little spread out!

I plan to skip the Kiwami games, at least, since I already played the original 1 & 2s and I'm interested in what's next, not a retread.

They were full blown remakes and not remasters, if you didn't know. But yeah still the same stories I guess. K1 is the 0 engine (which I think was all the PS3 games too), and K2 was in the Y6 engine. I'm glad I played in my bizarre order, because I didn't like how Y6 concluded at all. Apparently Y7 wasn't all too hot in Japan. So I wonder how it'll do here in the West now that Yakuza is a lot more popular here thanks to 0. Man, Japan's gotta let go of Kiryu someday though... I'll admit I don't like the look of the Y7 protagonist at all though. Never a fan of fro's.

The controller is growing on me. I keep speculating that it'll be more comfortable than the Dualshock 4 for me personally too, since this thing looks a bit meatier. Better for my huge hands.

It sure would have been nice if they'd gone down the Microsoft route and let the DS4 be fully compatible like the XB1 controllers are with Series S/X.

... yeah, Sony's continually had some stupid gimmick across most of their controllers from generation to generation. PS2 had the pressure sensitive tech that MGS2 used and I'm not sure what else, lol. PS3 with the lame Sixaxis and some other feature I think. Then the PS4 has the legendary touchpad that reached its maximum potential by becoming the universal MAP button for most games!
