These are the ones I've played enough to have a real opinion on:
Chrono Trigger - one of the best RPGs of all time
Contra = so-so. I'd like it if it weren't for the crappy behind-the-back levels.
Daytona USA = solid, the first 3D racer where the cars looked like cars and the tracks like tracks
Diablo = I really enjoyed it as a kid, strong atmosphere
Donkey Kong Country = Excellent platformer, there's really something special about it.
Double Dragon = Almost all of Technos' beat-'em-ups are very good, although this isn't among their best due to the heavy slowdowns of the arcade version and the BS added to the NES port
Dragon Quest VIII = Excellent RPG, not my favorite of the series though
EarthBound = another one of the best RPGs
Final Fantasy VI = best FF
Final Fantasy VII = pretty decent overall
Nights into Dreams... = I owned this as a kid and never thought it was the all-time great it was supposed to be, pretty cool though, and its world feels very special
Ninja Gaiden = If it's the NES game, I deeply hate that piece of garbage
Panzer Dragoon Saga = Overrated. Just okay.
Phantasy Star IV = Another all-time RPG classic
R-Type = I don't really like R-Type, you have to memorize absolutely every second of it and the checkpoints are too punishing since you suck without powerups.
Resident Evil = Very good still
Resident Evil 2 = .Even better, one of the standouts on the PSX
Secret of Mana = It's decent, definitely not one of the best action RPGs though
Shenmue = I like Shenmue overall, just wish there was more fighting
Silent Hill = Excellent
Silent Hill 2 = The best horror game I've played
Sonic the Hedgehog = I'm not a big fan of pure platformers anymore, but this one is still special
Sonic the Hedgehog 2 = Don't like it as much as the first, but very well-made
Soulcalibur = Great. While it's not my ultimate favorite, I'd say Soul Calibur is the smoothest fighting game series in existence.
Soulcalibur II = Also great.
Street Fighter II = Hugely influential and important, still pretty decent today, though outshined by many games it inspired. Though always solid, SF always felt a bit bland for me as a series, and I prefer 3D fighters.
Super Mario Bros. = Still very good
Super Mario Bros. 3 = Best pure platformer on an 8-bit system, probably
Super Mario World = Quality, though I wouldn't have the patience to finish
Super Metroid = Not bad, exactly, but incredibly overrated
Tekken 3 = Top 5 PSX 3D fighter, and the one where the series really got good
Tetris = I've played this damn game so much. Very addictive. I don't know how I feel about it, though. The concept is brilliant in its simplicity, yet it sometimes feel like a waste of time since there's no finality
The Legend of Zelda: A Link to the Past = Overrated
The Legend of Zelda: Link's Awakening = The best Zelda up to that point, this one actually has a cool story and a more involved world to explore, not just dungeons
The Legend of Zelda: Ocarina of Time = Also overrated. I liked the first third or so, after that you've seen the entire world and it's all dungeons
The Secret of Monkey Island = The only point-n-click adventure I put a lot of time into, it defines the genre to me
Virtua Racing = The 32X version still handles beautifully, in fact it features my favorite driving to this day
