I saw this in a stream once. Sarge will cry:
I don't think I ever fought Ceaseless Discharge legit. Even back in the day this seemed like an easy trick to figure out in a way. Hey, the arena is huge and I can run away from this thing? Huh okay...

They say your first Souls is always your hardest. But from what I've experienced and read, it seems like the games progressively got marginally easier as the series progressed.
I wouldn't recommend beating DeS right after DS. Sounds like that'd lead to burn out, probably need a palette cleanser or two.

I do wonder, though, if I were to drop back to DeS with what I've learned, that I might have an easier time of it. I feel like I've got a base to build on here. Probably. Your first will often be the hardest in ways. But Demon's is still far more experimental and weirder than even Dark Souls. It doesn't hold back.
Then Sekiro laughs at whatever knowledge you think from any of these will help as it throws the rule book out and forces you to play by its own new rules, or tough luck. No build guides or strats online will help you on this one, you have to execute.

I actually did look up Capra Demon strats when I was struggling so much. I saw that video, and was like, no sir. That's a sissy way to do it. So was the "run up the stairs and plunge attack from above" strat. Honestly, the fight gets plenty easy once the dogs are gone. And again, my build at this point had almost no VIT - it didn't take much to just absolutely wreck me.
That second one is not at all what I did - I stayed in that spot, he would raise up his fist and smash it, which I'd dodge roll clear of. And then whack the arm while it set there defenseless. Took four or five repetitions of that.
Sekiro legit terrifies me. I didn't use counters at all in DS - just felt way too risky to utilize well. And my understanding is that Sekiro is basically all countering.

To clarify my statement: " it seems like the games progressively got marginally easier as the series progressed" I was specifically talking about the Souls games with "Souls" in the title. I can't say that applies to Bloodborne or Sekiro.

I hear Bloodborne plays quite a bit quicker, and DSIII coming after it also plays quicker.
I'm not going to dive in straightaway, but I'm very tempted to at least boot up DS2 and see what it looks like. And I think I'm legit excited for Elden Ring.

No way I'm playing Elden Ring until I beat all the Souls games before it, in release order. To skip to the end just feels wrong and disrespectful of the series to me.

What's funny is that playing through Dark Souls already netted me a real-world conversation about the series with a dude in one of our pawn shops. He recommended that, if you decide to skip one, make it DS2, but he felt DS3 was very much helpful for what they do with weapon skills in that game and how they expand on them in Elden Ring.

Or... just play them all for yourself to judge. Too many people dog pile on DS2. Having just replayed it and DS3 back to back, I can now confidently say that I personally like DS2 more. It's got a lot of heart and is way more experimental in a good way. DS3 is highly influenced by Bloodborne in speed and the Weapon Arts are more of an extension of Bloodborne's trick weapons and more advanced move sets.
Skipping any of these is willingly skipping a 10/10.
I know Ex plans to start DS2 this year, then Bloodborne next, to which I bet he'll sleep walk through half the bosses like I did. I just want to prepare you guys. Bloodborne looks the most vicious from afar, but its teeth are soft. It's cool though and really what 3D Castlevania could have been. But DS3, Sekiro, and Elden Ring have better and more challenging parts and bosses on average to me.
