I've tried most of them, too. I enjoyed Heaven's Gate for being a decent Virtua Fighter clone. Wasn't there a big white gorilla you could play as? I thought he was cool. FIST is also a VF clone, but it's most likely the worst 3D fighter of its era. It's super basic, but the real problem is that the controls are incredibly unresponsive. Takes forever for moves to come out. I'm surprised Genki made it, usually they're a more respectable company from what I know.

I think you are recalling Engetsu: One of the weirdest Japanese only PS1 fighters I've played was Touki Denshou: Angel Eyes: Weird because it incorporates two completely different art styles. One is 2D hand drawn, the other prerendered 3D flattened into sprites. So half the fighters are 2D and the other CG, it's just odd: Twin Goddesses is even weirder, in that it incorporates FMV actors fighting 2D hand drawn monsters... in a VS fighter: No end of interesting stuff on PS1, once you start digging into Japanese exclusives in any given genre.

I found this one ( Lightning Legend) awhile ago but forgot to put it in this thread. I think it is a PS1 exclusive. I have not played it yet though.

I rarely think of PS2 as old, but it is. The common element in this picture is these were the last 3 (Japanese editions) fighters I ever bought for PS2 years ago:
