I'm not the type of gamer to skip games in a series like that, so I'm not sure what else to say (though in some huge classic series I might jump around, like I have with Dragon Quest).
XB2 is a monstrous step up combat wise to me from XB1, the battles are amazing and I had so much more fun with it in that way. But then you get to XB3 and it's one of the best battle systems I've ever played period. Going through that incline and seeing how they evolve things is cool (also don't forget Torna in between, the expansion to 2 is amazing and a good 20 hours on a main story only, I got about 40 doing 100%).
Each XB is its own self contained story and all. But by playing them in order, the pay off is pretty big for gameplay and story reasons.
XB2 has one of the most likable groups of JRPG characters to me. The main story is good but it's really the characters that stood out a lot and made it for me, some great villains too. It's a whimsical fun journey. I remember playing XB2 after Breath of the Wild and thinking "Dang, I like this even more than BOTW!" it just had that awesome sense of adventure and scope, with a great story/characters that BOTW lacked to me.
I'm still not sure if XB3 beats it in the characters department. Villain wise, definitely not. But it does grab you quicker with its setup and comes off a bit darker. Beyond that though it's the mechanics/gameplay elements where XB3 succeeds its predecessors. I literally did everything in this game except grind out some job levels and something else kind of pointless, it was addicting incarnate. Just incredible from a gameplay and exploration standpoint. And they got out all the side quest fluff that was in the earlier games, though XB2's wasn't quite as bad as XB1, but I still didn't feel compelled to smell the roses for too long in XB2.
I beat XB2 around 65-70 hours per the Switch time menu.
I beat XB3 at 121 hours and then kept playing until 156 hours to 99% it.
Could beat both faster than that though if you just main line them. And I know it sounds like you're losing interesting in super long stuff. So it's a hard sell on both in ways. But if there was anything you enjoyed about XB1, or any inkling of "potential" throughout, and the sequels look interesting... I recommend giving them a look. Definitely bang for your buck if you like and stick with them.
