Welcome to the end of that exponential curve. You have to survive the first 1:30 (actually shorter than real-time, but it feels longer!) before he swaps to the winking punches that don't immediately knock down. This is also where the input lag can start catching you. There's very little margin for error.
I've seen a couple of ways to approach him. Some speedrunners use a stomach punch to keep him in place for a bit (you can't do too many in a row, though, at the start of the match because he'll slip an uppercut through!), then dodge as you're tired. The "traditional" way is to dodge and counter-punch with a couple of headshots. Either way, there's a measure of luck/skill getting through without getting knocked down.

Mr Dream just one shots me. Oh dang, didn't realize you were playing the second revision of Punch-Out!! which removed Mike Tyson entirely and replaced him with lame Mr. Dream. (Contrary to popular belief, Tyson was not removed because of his rape conviction which did not occur until a year after the changeover, but because his contract expired. Since he had lost the title to James "Buster" Douglas by that point, Nintendo made no attempt to negotiate a new contract with him.) Man just load up Mike Tyson's Punch-Out!! instead, and use this code: 007 373 5963 to go straight to Tyson. Much more impressive to say "I beat Tyson" than "I beat Mr.Dream".

Frick! I kept looking up the full roster to check my progress at times and yeah, I was getting really confused at seeing different characters listed. So Mr. Dream is the final fight for this version? I didn't come this far in Punch Out to say I beat Mr Dream, lol. So yeah I'll grab another rom...
Are there any other weird differences or things I maybe missed out on playing this version?

Yeah, no difference between the two. There were rumors that Dream is easier, but that isn't true.

But yeah this is way more epic and the legacy I've heard about for all these years haha. I love how this version even opens up with a splash screen of Mike Tyson.
He actually seems even faster than Dream or something... but maybe the fear is just getting to me.

After Sandman, Super Macho Man isn't that bad. Before Tyson, it is Sandman that gets me because of the tempo.

But I think the bulkier big guys like Sandman, Bald Bull, etc gave me more trouble than the quicker nimble fighters. Uppercuts got easier for me to spot but it's those quick Sandman styled jabs that'll get me and throw me off my groove haha.

I'm made it to Round 2 with him in Punch-Out. But good lord, never would have guessed Mike Tyson is probably a top 10 hardest video game bosses of all time candidate.
