So by your own distinction System Shock is not actually an RPG. Thus at most it's a lite-RPG. I noticed my own logical fallacy right there and I thought a bit more about it. The thing is, a game like HeXen II with the different selectable heroes, experience and level ups as well as non-linear level design and puzzles galore might seem closer to an RPG than System Shock on paper. The same could be told about Strife as it has towns full of NPCs, side quests and stores. However, the gameplay in these games is very arcade-y seeing as their core HeXen II plays like Quake and Strife plays like Doom - same engine - and most of those RPG elements end up feeling pretty shallow anyway. Whereas System Shock has a completely different feel - basically Ultima Underworld in space as already said. It lacks the character creation aspects and the stats/level ups, but the level of complexity and slow pace makes it indeed much closer to a dungeon crawler than the aforementioned games. So yeah, I guess System Shock is a lite-RPG, but unlike HeXen & Co. there's nothing arcade-y about it. In other words, Strife or HeXen do have quite a bit more of world interactivity, albeit not as nearly as much as System Shock, but their gameplay still feels very close to their respective progenitor - Doom and Quake. By the way, Thief is another beast entirely. There's an inventory and resource managament, a bit of dungeon crawling (not as nearly as slow as System Shock) and a ton of adventure elements, but that's all in service of it being a stealth game and there's nothing quite like it among first person games in the 90s. Games like Tenchu would be a better comparison. Deus Ex obviously comes close, but there's much more to that game than stealth, whereas Thief is more focused and uncompromising. It's also up there in terms of interactivity and world immersion. So yeah, I recommend playing it, anayo. If you want something more like Doom, I recommend Dark Forces and Heretic.

So yeah, I recommend playing it, anayo. To that I'll add that Thief is my personal all time most favorite game ever. If that means anything from someone who's been playing video games since 1983. That said, Thief is the opposite of arcade-y flashy action for the record. The only things it has in common with DOOM are fairly superficial. Not implying @tsumuri was drawing that correlation, just making that point clear. I agree that those are excellent choices, especially Star Wars: Dark Forces. It is a truly excellent FPS in the style of DOOM, and holds up well. It's even on GOG: www.gog.com/game/star_wars_dark_forces

The original System Shock is a masterpiece. I know it has a cult following but given how important of a game it is the number of people who have actually experienced it is far fewer than it should be.

Dang it, GOG really, really needs to put it on sale right now. I promise I will buy it when it does!

Just watched a vid, and it does look cool. Did y'all happen to use the mouse look mod? I feel like I'd enjoy it a lot more that way.

Did y'all happen to use the mouse look mod? No, I beat this game a long time ago in its original form. Although it was the CD version: I might even still have the game in my PC archives actually.
I'm sure the GOG version is the way to go these days though.

Yeah, I suspect so. I actually just dug through my CD collection to make sure I didn't somehow have it (I mean, that's a thing for me sometimes), but nope.
The CD version is apparently the one to play, too. The review I just watched mentioned that there was some infighting about the original release, and they wanted to get it out there in floppy form for whatever reason. As pointed out, that established a first impression, even if it made it to market faster, but the audio apparently really adds to the experience.

For SS1 I played the "Enhanced Edition" myself.

The GOG version lets you toggle mouselook by pressing E.
